My mother works night schedule, and she also drinks a lot (no alcohol). So it could be from staying awake, but the likelihood of that isn t much. I also have anxiety issues, and I don t sleep much during the night, but sleep a lot during the day. And I hardly drink enough, so its probably just normal for you because you exercise during night, which you said- its cooler and not that many people. So in that case, you wouldn t be too hot, and not that embarrassed of people looking. That means that you would have more motivation to go on a longer bike ride, and if it is a soothing method for you, then that would also cause you to want to be out longer. Which would make you thirsty, and even if you brought some water with you, you would run out. But still be motivated to continue biking. So what im saying is, you are probably so thirsty because you either might be going periods without water, or you are just a thirsty man. Which is also normal.

Try wearing cycling gloves, it will make a difference. I wear gloves when I ride my road bike but otherwise I don t need them. If the bike is the wrong size it may cause you to put too much pressure on your hands. Measure you inseam from your crotch to the floor. Measure from the center of the crank to the top of the seat tube where the seat post clamp is. What are those measurements ? Edit: You want a frame that is 65% of your actual inseam or if you stand over the bike a 1-2 inch clearance.
