We also used a cheap brand dates, wondering if they were not moist enough.

You could also consider chia seeds and flax seeds. I substituted the peanut butter for half almond butter and half a spread which is made up of brazil nuts, peanuts, almonds, cashews, hazelnut, sesame impact and chia seeds, which is an Australian product.
